As Director, Loida Flojo oversees all aspects of Enderun Extension, including Programs, The Study, Certificate Courses, Conferences, and Consultancy. Loida is passionate about education, and this passion has enabled her to experience working with various globally recognized academic institutions in Korea, Japan, China, Thailand, Vietnam, and Switzerland. She has been in the academe as consultant, program developer and trainer for 18 years, collaborating with various universities in terms of course design, internship programs, assessment tools, and professional development courses among others.In 2010, she joined Enderun Extension, the continuing education arm of Enderun Colleges. As a program development expert, she spearheaded the creation of new curricula aligned with Enderun's goal to produce graduates who are competent, results-driven, and culturally aware.In 2013, she started leading Enderun Extension's sales, operations, and academic divisions and currently, Enderun Extension has developed a broad range of learning programs and has remained to be a key player in the continuing education space under her management. Program sales rose to as high as 300% when Loida joined the team.Loida enjoys collaborating with individuals and groups whose end goal is to contextualize learning and transfer knowledge to those who desire to upskill and excel in their fields.

Simoneil Mendoza is the Program Head for Languages and Short Courses at Enderun Extension, putting him at the helm of all instructional and curricular activity at Enderun. Overseeing three of Enderun’s centers and a department, he supervises more than 100 teachers under his wings, ensuring that they ably provide the quality of education that Enderun stands for. Simon manages all academic projects and programs that cater to both local and international clientele. He effectively spearheads academic camps with sizes of even as big as 1000 students, including students from our Asian neighbors such as South Korea, Vietnam, and Japan.Simon graduated from the University of the Philippines, Diliman, and is a candidate for a master’s degree from the Ateneo de Manila University. He is a TESOL-certified teacher and an International Baccalaureate (IB) examiner.Previous to his full-time commitment to Enderun, he was a department chairperson and faculty president at Xavier School, San Juan, where he began teaching as an IB teacher for Theory of Knowledge (TOK) and Business Management (BM) Higher Level (HL). He also taught high school Social Science at St. Pedro Poveda School. In between his years of teaching in the academe, he applied his education-oriented training in the corporate industry.Simon plays ultimate frisbee as a hobby and has coached his teams to many championships.

Thomas Fleckner, a native German speaker, has received a number of qualifications all of which contributed to his professionalism and dedication. He received his bachelor’s degree in Fine Arts in Germany. In his pursuit of professional development, Thomas continued to acquire and improve his skills by undergoing trainings in communication and web design skill development among others.Thomas is a many-faceted expert who is eager to challenge himself in new fields. He has experience in language teaching, customer care, elderly care, technical and web design, product training to name a few. During the 1990s, Thomas ran his own company and learned to work and thrive independently.In 2010, Thomas moved to the Philippines in and immediately fell in love with the country. Initially, he worked at Hinduja Global Solutions in Manila, and became a language teacher simultaneously. He taught German, Dutch and the English language. Once his contract with the company ended, Thomas decided to fully devote himself to teaching. He has been working with Enderun since 2018 and has been able to display his exceptional knowledge and flexibility in teaching the German language. He now heads the German Program with enthusiasm and a global mindset.

Bel Castro is one of the founding faculty members of Enderun Colleges and is currently Assistant Dean of the College of Hospitality Management. Prior to joining Enderun, Bel enjoyed a career which spanned the fields of advertising, public relations, events management, line production, as well as hospitality.Her academic credentials include a degree in Restaurant Operations from Le Cordon Bleu in Australia and a Master of Arts in Gastronomy, a double-badged program of Le Cordon Bleu and the University of Adelaide in South Australia. Bel also oversees all wine programs offered by Enderun Extension. In addition to holding a Level 3 Award in Wine & Spirits from the Wine & Spirit Education Trust (UK), she has also successfully completed the WSET Wine Educator’s Programme.Bel’s personal interests are centered on food history, cuisine, and culture. Her research in these fields has led to invitations to present her work on several occasions at the Symposium of Australian Gastronomy, and at the prestigious Oxford Symposium of Food and Cookery.

Chef See Cheong Yan is the Culinary Head at Enderun Colleges. He is responsible for overseeing the Culinary Arts department, curriculum development, and spearheading all culinary courses since the school’s pre-opening.He graduated from Les Roches in Switzerland with a Diploma in Hotel and Restaurant Management. Chef See also earned his Certificate in Business Administration, with honors, from Washington State University. In addition to his education credentials, Chef See has over 20 years’ worth of experience in the field of culinary arts worldwide, having worked at the Kempinski Hotel and Traders Hotel in China and at Bahnhof Buffet SBB Basel in Switzerland, among others. In the Philippines, Chef See has led the kitchen operations of Edsa Shangri-La, Hyatt Regency Manila, and Tagaytay Highlands.Truly an international citizen, Chef See speaks English, Bahasa Malaysia, Cantonese, Mandarin, French, and Filipino fluently. In summer of 2008, Chef See also underwent training at Ducasse Education in France. In 2012, he was part of the Philippine Airlines’ Masterchef series, where renowned guest chefs restyled the in-flight menu with a variety of international cuisines.

Ducasse Education handpicked French Chef Marc Chalopin as the executive chef of Ducasse Education Philippines to maintain the standards of Alain Ducasse and ensure that the philosophy, culinary principles, and techniques are properly transmitted to students.Chef Marc has more than 35 years of kitchen and teaching experience. He worked with two of the most exceptional and world-acclaimed chefs, Joel Robuchon and then Alain Ducasse. He worked for six years with Louis Grondard in restaurant Drouant, where the academy that confers the French literary award Prix Goncourt converges annually. He also worked at the Eiffel Tower restaurant Jules Verne, Hotel Ritz, and restaurant Maxim’s in Paris. After many years of experience in restaurants, he decided to transmit his culinary know-how by joining Le Cordon Bleu in Paris, and then becoming its opening executive chef in Seoul, South Korea.Chef Chalopin joined Ducasse Education and Enderun in 2008 to supervise the culinary program in Manila, control the quality of instructors and curricula, teach advanced culinary classes, as well as partner with suppliers to get the best produce, materials, and equipment available.

Colman Walsh is the founder and CEO of the UX Design Institute (UXDI), the global leader in UX Education and Certification. Colman’s career in UX Design began in San Francisco in 1999. Since then, he has worked with blue-chip clients, specifically in New York and London. Having more than a decade of experience using the UX platform, Colman founded UXTraining.com in 2013, which provided specialized training in UX Design across Europe and North America. With his experience running UXTraining.com, Colman wanted to expand global reach to share his knowledge and skills in UX. This gave way to the establishment of the UX Design Institute (UXDI), in 2017. He is currently based in Dublin, where he continues to provide his expertise, covering the entire spectrum of UX Design: from research, strategy, design and prototyping. He is also a fun and engaging presenter, an accomplished trainer, facilitator and educator in the digital space.

Kelvin Gan has more than 15 years of experience in the education industry, working strategically with public institutions and companies to empower youths and professionals to stay relevant and enhance career progression.Having managed campuses in Singapore, Mongolia and Vietnam, Kelvin has impacted more than 100,000 individuals in his span of career.He is currently Regional Business Development and Youth Lead for Project Management Institute (Asia Pacific) and oversee the outreach within the region, collaborating with strategic partners to upskill and enhance employability of youths and executives.
